BBC Good Food Show Butternut Squash and Harissa Soup
2 white onions peeled and chopped
1 large butternut squash peeled and chopped in cubes
2 tbsp Olive oil
1 tsp Salt
1 tbsp Harissa paste
2 pints vegetable stock
Salt and pepper for seasoning
Place the onion, squash and olive oil into a large deep saucepan.
Put on a medium heat and season with salt, this will draw out the moisture and help bring out more flavour.
After approx 10 minutes add the harissa and stick, then turn the heat up and bring to a boil.
Simmer for 20 minutes, then blend until smooth.
Taste and season with a little salt and pepper before serving.
