Greek Lamb Meatballs Bake

This recipe brings together everything I love about Greek food — juicy lamb, ripe tomatoes, fragrant herbs, and salty feta — all baked together in one simple tray. It’s vibrant, full of sunshine, and a guaranteed crowd-pleaser.
Make sure your tomatoes are similar in size to your meatballs so they burst and create a rich tomato sauce as they cook. It’s like a trip to a sun-drenched Greek island, right from your own kitchen.

Serves: 4
Ingredients
500g minced lamb
2 cloves of garlic, chopped or crushed
1 tsp dried oregano
1 tbsp dried mint
2 tbsp breadcrumbs
3 red onions, cut into sixths
2 lemons, quartered
600g cherry tomatoes (use small ones so they burst while cooking)
4 tbsp extra-virgin olive oil
100g Kalamata olives
1 handful of flat-leaf parsley, chopped
75g feta cheese
4 pitta breads
Method
Preheat the ovenP
reheat your oven to 180°C.
Make the meatballs
In a large bowl, mix together the minced lamb, garlic, oregano, mint, breadcrumbs, salt, and pepper. Using wet hands, roll the mixture into 12 even-sized meatballs (about 50g each).
Assemble the traybak
Place the meatballs into a deep nonstick baking dish. Add the red onions, lemons, and cherry tomatoes, then drizzle everything with extra-virgin olive oil. Season with a little salt and pepper.
Bake to perfection
Add the olives and roast uncovered for 40 minutes, until the meatballs are golden and the tomatoes have burst into a delicious sauce.
Finish and serve
