Crushed Potato Bravas with Chorizo (ish)

This Crushed Potato Bravas with Chorizo (ish) recipe is inspired by my good friend Carlos — simple ingredients cooked beautifully together.The potatoes roast in the rich, smoky oils from the chorizo, creating golden, crispy edges and deep, savoury flavour. It’s easy to make, perfect for sharing, and absolutely packed with Spanish sunshine in every bite.

Prep time: 20 minutes

Cooking time: 40 minutes

Serves: 4


Ingredients

  • 500g baby or new potatoes

  • 1 tbsp salt

  • 225g chorizo sausage

  • 2 cloves of garlic

  • 2 tbsp olive oil

  • 1 tsp smoked paprika

  • Pinch of salt and pepper

  • 1 tbsp sherry vinegar

  • 1 handful fresh coriander, chopped

  • Sour cream, to serve (optional)


Method

Boil the potatoes

Preheat your oven to 170°C.Bring a large pan of salted water to the boil and cook the potatoes until just tender. Drain and set aside.


Prepare the tray

Slice the chorizo into 1cm rounds and place them in a large roasting tray.Add the garlic cloves, lightly smashed to release their flavour.


Crush and season

Place the cooked potatoes in the same tray. Use a mug or potato masher to gently crush them so they flatten slightly and split open.Drizzle with olive oil, then season with smoked paprika, salt, and pepper. Toss to coat evenly in all those smoky chorizo oils.


Roast to perfection

Roast in the oven for 30–40 minutes, or until the potatoes are crispy and golden around the edges.Remove from the oven, drizzle over the sherry vinegar, and toss to coat.


Finish and serve

Sprinkle with chopped fresh coriander and serve warm with a spoonful of sour cream, if you like.


Notes

  • For a vegetarian twist, swap the chorizo for smoked paprika and roasted peppers.

  • Sherry vinegar adds a sharp, tangy lift — don’t skip it!

  • Serve as a tapas-style side dish or as a main with a fried egg on top.
