Butternut Squash Soup
This Butternut Squash Soup is rich, velvety, and packed with warming spice — the ultimate comfort dish for colder days.The harissa adds a subtle heat and depth of flavour, while the lemon and herbs brighten everything up. Ingredients
2 white onions, chopped
1 large butternut squash, peeled and cubed
2 tbsp olive oil
1 tsp salt
2 tbsp harissa paste (1 for the soup, 1 for the dressing)
1L vegetable stock
1 lemon, juiced
1 tsp sesame seeds
1 tbsp coriander, chopped
1 tbsp mint, chopped
Pinch of salt and pepper, to taste
Method
Cook the vegetables
Place the chopped onions and cubed butternut squash into a large saucepan with olive oil.Cook over medium heat for about 10 minutes, seasoning with salt to help draw out moisture and intensify flavour.
Add spice and stock
Stir in 1 tablespoon of harissa paste, then pour in the vegetable stock. Bring to a boil, reduce the heat, and simmer for 20 minutes, until the squash is tender.
Blend until smooth
Once cooked, blend the soup using a hand blender or a jug blender until silky and smooth.
Make the dressing
n a small bowl, combine the remaining harissa paste, lemon juice, sesame seeds, and a drizzle of olive oil. This bright, spicy dressing perfectly balances the soup’s creamy texture.
Finish and serve
Ladle the soup into bowls and drizzle with the harissa dressing. Garnish with chopped coriander and mint, then season to taste with salt and pepper.Serve immediately with warm bread for dipping.
Notes
Add roasted red peppers for extra sweetness and depth.
Swap harissa for mild chilli paste if you prefer less heat.
For a creamier version, stir in a splash of coconut milk before serving.
