Roasted Parsnips Glazed in Golden Syrup, Smoked Sea Salt and Sherry Vinegar

Cook time 45 minutes
2 tbsp Vegetable oil
2 tbsp Golden Syrup
2 tbsp Sherry Vinegar
1 tbsp Smoked sea salt
Peel the parsnips, then cut them into half longways, or if they are large parsnips into quarters as well.
Place the vegetables into a large roasting tray with the vegetable oil.
Get your hands in and give the parsnips a mix together to make sure they get a good coating of oil.
Roast the parsnips in a pre heated oven 170c for 40 minutes or until tender.
Meanwhile in a small bowl mix together the vinegar and syrup ready to drizzle.
When the parsnips are cooked, remove from the oven and pour over the syrup and vinegar.
Sprinkle over the smoked salt and shake the roasting tray to make glaze everything up before serving.
