Carrots Cooked in Salt, Sugar and Star Anise

Cook time 30 minutes
500g Medium sized carrots
2 tbsp Salt
2 tbsp Sugar
4 Star anise
Peel the carrots and place them in a large sauce pan half full of water only.
Add the salt, sugar and star anise.
Bring the pan up to the boil and simmer for 25 -30minutes or until the carrots are tender.
Remove the carrots from the boiling water and turn the heat up on the pan.
Boil the cooking water until it has reduced by 3/4’s, the sugar that is in the water will become like syrup to glaze the carrots.
