Boxing Day Frittata
Makes 1 frittata thats serves 2
10 Cherry tomatoes on the vine
8 Pigs in blankets
6 Cooked potatoes (Roast potatoes are perfect)
Salt and pepper
3 Free range eggs
1 handful of salad leaves
Remove 4 tomatoes from the vine to use in the frittata and cut them in half.
Place the cherry vine tomatoes onto a tray with a drizzle of olive oil and a sprinkle of sea salt, then roast in the oven 170c for 6-7 minutes.
Meanwhile pre heat a non stick frying pan.
Break up the pigs in blankets and add them to the pan with the potatoes, if you are using one of our can to pan frying pans you won’t need any oil, if not just a splash id required.
Whisk the egg together in a small bowl with a little salt and pepper.
Ass the remaining tomatoes in to the frying pan.
Pour the egg mixture into the frying pan over the ingredients and continue to cook on a medium heat until the egg is cooked.
Run a spatular around the frittata before turning the pan upside down onto a pan to serve.
Remove the tomatoes from the oven and sit one top of the frittata with the salad leaves.
