20 thinly sliced chorizo sausage
50g parmesan cheese
1 handful of coriander
4 10" tortilla wraps
place a non stick frying pan on a medium heat
Meanwhile whisk together the eggs and season with a little salt, pepper and the chopped coriander
add a splash of oil into the frying pan
pour a ladle full of the egg mixture and roll it around the pan to fully cover it
lay 5 slices of chorizo on top of the egg mixture that is cooking
continue to cook the fritter, sprinkle with a little grated parmesan cheese
transfer the egg fritter onto a tortilla wrap and roll up (roll up in foil to keep warm if required)
continue to cook the remaining mixture until you have made all four portions.
I like to had a little chopped fresh chilli to the egg mixture if your in a chilli mood !!
