British Summer Apple & Berry Jam

There’s something wonderfully nostalgic about a jar of homemade jam, and this British Summer Apple & Berry Jam captures that feeling perfectly. Packed with strawberries and red berries, with finely chopped apple to help it set naturally, it’s sweet, sharp, and full of summer flavour. It’s ideal for spooning onto toast, scones, or swirling through yogurt.

Prep time: 15 minutes
Cooking time: 20 minutes
Serves: Makes approximately 3–4 medium jars
Ingredients:
500g strawberries, hulled
300g mixed red berries
1 apple, peeled, cored, and finely chopped
700g sugar
Juice of 1 lime
Method:
Hull the strawberries and prepare the mixed red berries.
Peel the apple, remove the core, and chop it into very small pieces.
Place the strawberries, red berries, chopped apple, and sugar into a large pan.
Heat gently at first, stirring until the sugar has dissolved.
Bring the mixture up to a boil.
Continue cooking until the jam reaches 105°C. A temperature probe is very helpful here.
Squeeze in the lime juice and stir well to give the jam a sweet and sharp balance.
Once the jam has reached temperature, leave it to cool slightly.
Pour the jam into sterilized jam jars.
Seal and store in the fridge.
