Homemade Limoncello

There’s something wonderfully special about making your own limoncello at home. Bright, zesty and beautifully smooth, this classic Italian liqueur captures the sunshine of the Amalfi Coast in every sip. Kept ice cold and served after dinner, homemade limoncello also makes a brilliant gift and is a lovely recipe to have tucked away for summer gatherings and special occasions.

Timings
Prep time: 20 minutes
Infusing time: 2 weeks
Serves: Makes around 1 litre
Ingredients
6 lemons, unwaxed if possible
700ml bottle vodka
500g sugar
400ml boiling water

Method
Peel the zest from all the lemons, taking care to remove only the yellow zest and not the bitter white pith.
Place the lemon zest into a large clean jar.
Pour over the vodka and seal with a tightly fitting lid.
Leave to infuse for 1 week, shaking the jar once a day.
Put the sugar into a heatproof bowl and pour over the boiling water, stirring until the sugar has fully dissolved.
Add the sugar syrup to the vodka and lemon zest.
Seal again and leave for a further 1 week, shaking regularly.
Strain the limoncello through a fine sieve or muslin into clean, sterile bottles.
Chill in the fridge before serving over ice, straight, or topped up with sparkling water.
