Giant Chocolate Chip Cookie

There’s something properly comforting about a giant chocolate chip cookie. It’s got all the best bits of a classic cookie — crisp golden edges, a soft chewy middle, and plenty of dark chocolate running through it — but baked as one big, sharable treat. It feels a little bit nostalgic, a little bit indulgent, and very hard to resist once it comes out of the oven. Finished with extra chocolate chips and just a touch of sea salt, it’s the sort of bake that’s perfect for sharing warm at the table, cut into wedges like a pizza.


Timings:

Prep time: 15 minutes

Cooking time: 20–25 minutes

Serves: 8–10


Ingredients:

  • 200g butter, softened

  • 180g light brown sugar

  • 1 large egg

  • 2 egg yolks

  • 1 tsp vanilla extract

  • 150g plain flour

  • 100g self-raising flour

  • 1/2 tsp baking powder

  • 1/2 tsp bicarbonate of soda

  • Pinch of salt

  • 200g 70% dark chocolate chips, plus extra for topping

  • Pinch of sea salt, for topping


Method:

  1. Preheat the oven to 180°C and line a 12-inch perforated pizza tray with baking parchment.

  2. Add the softened butter and brown sugar to a bowl and beat together until light and fluffy.

  3. Add the egg and egg yolks, then mix in the vanilla extract.

  4. Add both flours, the baking powder, bicarbonate of soda, and a little salt.

  5. Stir in the dark chocolate chips.

  6. Beat or mix the dough until everything is well combined.

  7. Transfer the cookie dough onto the lined pizza tray.

  8. Press it down evenly to fill the tray.

  9. Scatter over a few extra chocolate chips and a little sea salt.

  10. Bake until golden around the edges with a soft centre.

  11. Leave to cool slightly, then use a pizza cutter to cut into wedges.



Chef’s Tip:

Don’t overbake it — the middle wants to stay a little soft so you get that lovely chewy centre. It will continue to firm up slightly as it cools, while the edges keep that perfect crisp bite.
