Halloumi Cheese Tacos with Tomatillo Salsa

Crispy taco shells filled with grilled halloumi and fresh tomatillo salsa

These tacos are a really fun little dish, full of fresh flavour and a lovely mix of textures. They’re not traditional by any means, but that’s part of the charm. Salty, golden halloumi works brilliantly tucked into crisp taco shells, especially when you pair it with something fruity and sharp like this tomatillo salsa. The pear adds a gentle sweetness, the lime and chilli bring freshness and zing, and the coriander lifts the whole thing beautifully. It’s the kind of recipe that feels colourful, relaxed, and full of character — perfect for a light lunch, an easy supper, or something a bit different to share with friends.


Timings:

Prep time: 15 minutes

Cooking time: 5 minutes

Serves: 2


Ingredients:

  • 1 red onion

  • 1 red chilli, finely chopped

  • 1 lime

  • 300g tinned tomatillos

  • 1 pear

  • 1 handful fresh coriander

  • 6 taco shells

  • 1 block halloumi cheese

  • 2 limes, cut into wedges, to serve

  • A little oil, for drizzling


Method:

  1. Finely chop the red onion and place it into a bowl with the chopped red chilli.

  2. Squeeze over the juice of 1 lime and leave to stand for 5 minutes.

  3. Cut the pear into slices, remove the core, then dice into small chunks.

  4. Mix the tomatillos and pear together in a bowl.

  5. Stir in the fresh chopped coriander along with the onion and chilli mixture.

  6. Cut the halloumi into 1cm slices and drizzle with a little oil.

  7. Grill the halloumi for 2 minutes on each side, until golden.

  8. Fill the taco shells with the grilled halloumi.

  9. Spoon over the tomatillo salsa.

  10. Finish with a good squeeze of lime juice and serve straight away.

Chef’s Tip:

If you can, serve the halloumi straight from the grill while it’s still warm and soft in the middle. And don’t be afraid to make the salsa a little ahead of time — giving it a few extra minutes lets the lime, chilli, and coriander really come together.
