Halloumi Bao Buns with Strawberry Pimm’s Salsa
Ingredients
Serves 4
8 Bao buns
2 Blocks of Hallumi cheese
2 tbsp olive oil
For the salsa:
2 Red onions peeled
2 Limes
1/2 Cucumber
400g Punnet fresh strawberries
1 Red chilli
2 tbsp olive oil
1 Handful fresh mint
1 tbsp Honey to finish
Here’s how:
Place the bau buns into a steamer, sat on a piece of parchment paper, they should take 10 minutes to warm through. You can also microwave as well if it is easier, just remember to cover with cling film.
To make the salsa, finely dice the red onion and soak in the juice of 2 limes
Chop the chilli and add to the onions.
Cut the cucumber down the middle long ways and remove the seeds, then dice into small cubes and add to the onions.
Hull the strawberries and chop into cubes, add to the bow with the chopped fresh mint and a little honey.
Stir the salsa together and put to one side.
Cut the halloumi into 1cm thick slices and pat dry with a little kitchen roll, then drizzle with olive oil and fry in a hot pan until golden on each side.
Serve the halloumi cheese in the buns and top with the Pims salsa.
Finish with an extra squeeze of lime for a zesty finish.
