A vibrant, punchy chimichurri is the perfect partner for rich skirt beef. Fresh parsley, chilli, garlic, and red wine vinegar come together for a bold Argentinian-style sauce that cuts through the meat beautifully and adds a fresh, zesty finish.

Serves: 4


Ingredients:

  • 60g flat-leaf parsley, chopped

  • 1 red onion, finely chopped

  • 1 clove garlic, crushed

  • 1 red chilli, finely chopped

  • 60ml red wine vinegar

  • 150ml extra-virgin olive oil

  • Pinch of salt

  • Pinch of black pepper


Method:

  1. Add the chopped parsley, finely chopped red onion, crushed garlic, and red chilli to a bowl.

  2. Pour in the red wine vinegar and extra-virgin olive oil.

  3. Season with a pinch of salt and black pepper.

  4. Stir everything together well until fully combined.

  5. Leave for a few minutes before serving so the flavours can develop.
