A vibrant, punchy chimichurri is the perfect partner for rich skirt beef. Fresh parsley, chilli, garlic, and red wine vinegar come together for a bold Argentinian-style sauce that cuts through the meat beautifully and adds a fresh, zesty finish.

Ingredients:
60g flat-leaf parsley, chopped
1 red onion, finely chopped
1 clove garlic, crushed
1 red chilli, finely chopped
60ml red wine vinegar
150ml extra-virgin olive oil
Pinch of salt
Pinch of black pepper
Method:
Add the chopped parsley, finely chopped red onion, crushed garlic, and red chilli to a bowl.
Pour in the red wine vinegar and extra-virgin olive oil.
Season with a pinch of salt and black pepper.
Stir everything together well until fully combined.
Leave for a few minutes before serving so the flavours can develop.
