Chorizo and Lentil Ragu for Under a £5!
400g Dried pasta
225g Chorizo stick
1 Onions finely chopped
2 Garlic cloves chopped
400g Tinned cooked lentils
400g Tinned tomatoes
1 tsp smoked paprika
Salt and pepper
1 tsp Smoked paprika
50g Grated Parmesan Cheese
Cook the pasta in a large pan of salted boiling water for 9 minutes.
Meanwhile to make the ragu, chop the chorizo sausage in to small pieces and add to a large shallow non stick frying pan.
As the chorizo starts to warm up in the pan it will melt the fat out, once this happens add the chopped onions and season with a little salt.
Together the salt and the heat from the pan with draw out the moisture and allow the onions to caramelise in the pan, this is your first layer of flavour.
Continue to cook until soft, then add the paprika, and lentils.
Open the can of tomatoes, if you are using whole tomato break them up in your hand as they pour out, if you are using
