How to Cook the Perfect Fillet of Salmon


4 Salmon fillets 200g per portion or trout fillets

1 tbsp table salt

1 tbsp sugar

2 tbsp olive oil

1 spring of thyme

1 tbsp butter

1 lemon cut in half

Here's how

Mix the sugar and salt together in a bowl.

Place the fillet of salmon skin side down on a plate and sprinkle the sugar and salt mixture over the top.

Leave the fish to cure for 1 hour, then wash the fish to remove the cure.

Pat fry with kitchen towel, then drizzle with olive oi, season with salt and pepper on both sides.

Pre heat a non stick frying pan and cook the fish skin side down for 6 minute.

Add the thyme and butter.

Turn the fish over and place a lid on pan.

Cook for a further 5 minutes and your done.

Remove from the pan and finish with a squeeze of lemon juice.
