Summer Peaches with Cumberland sausage

Serves 4


8 Cumberland sausages

4 Peaches

4 Banana shallots

2 tbsp of olive oil

1 tbs of chopped thyme

1 tbsp of chopped rosemary

2 tbsp of raspberry vinegar

2 tbsp of roasted pistachio nuts

Here's How

Place a large heavy grill pan on a medium heat

Meanwhile place the sausages and shallots on an oven try with the olive oil and place in the oven for 25 minutes

Cut the peaches in half and place cut side down onto the grill until you have some lovely grill marks, then add them to the oven in the same tray as the sausages

When the sausages are cooked and the peached are soft add the chopped herbs and vinegar

Mix the sausages and peaches together to allow all the cooking juices to come together

Finally finish with roasted crushed pistachio nuts.
