Simply Yummy BBQ Chicken Wraps


Summer slaw and chicken with a BBQ sauce in a wrap

Ingredients

4 chicken breast

1 tsp of chopped fresh thyme

salt and pepper

4 tortilla wraps

1 pint of real ale

100ml of ketchup

100ml of brown sauce

1 star anise

1 tsp of dried chilli flakes

1 tsp of ground cumin

1 red onion

1 bund of spring onions

3 carrots

1/4 of a white cabbage

1 handful of flat leaf parsley

Heres how

Pour the beer into a sauce and boil until it reduces to 25% of the starting liquid.

add in the star anise, cumin and chilli

add in the ketchup and brown sauce, then set to one side.

heat a non stick frying pan or grill pan

trim the chicken breast and cut 3-4 small cuts into the breast about 1/2cm deep

season with salt, pepper and chopped thyme

drizzle with a little olive oil and cook cut side down in the heated frying pan.

when the chicken is golden and crisp turn over and continue to cook for a further 10 minutes until the chicken is completely cooked through

While the chicken is cooking make the slaw

Using a sharp knife chop all the vegetables as finely as possible, the finer you chop the nice the slaw is.

when the the veg is chopped dress with a little olive oil and red wine vinegar and set to one side while the chicken finishes cooking.
