Ingredients 

 

225gCalifornia Prunes

175mlboiling water

1 tspvanilla extract

85gself raising flour plus extra for greasing

85gwholemeal flour

1 tspbicarbonate of soda

2eggs

85gbutter, softened, plus extra for greasing

140gdemerara sugar

2 tbspCalifornia Prune Juice

100mlsemi skimmed milk

 

for the sauce 

 

60glight muscavado sugar

25gbutter into pieces

110mldouble cream

4 tbsCalifornia Prune Juice

 

Here's how 

 

Chop the California Prunes and stir in the vanilla extract. Butter and flour seven mini pudding tins (each about 200ml/7fl oz) and sit them on a baking sheet. Heat oven to 180C/fan 160C/gas 4.
